Team JEGS chef Nicky Morse brings his unique recipes to NHRA fans each race with a new installment of "Quarter-mile Cuisine." Morse takes readers step-by-step through many of his award-winning recipes, the same ones he's prepared for countless racers, movie stars, musicians, athletes, fellow celebrity chefs, and government dignitaries during his career. From the knee of his Italian grandmother to exhaustive training at Ohio's top French restaurant, Morse's knowledge of cooking is as varied as the recipes he offers.

It's getting down to the wire this season with some of the best drag racing competition ever. You don't even want to get up from the TV. I understand! But, you have got to eat! Stay home and call your friends over to watch race day. Here is a recipe with quite a zap that your friends will be sure to remember.

Tempura Jalapeno Popper
(Makes 6)

Ingredients:

6 Jalapeno Peppers (Large- Fresh)
6 Tablespoons Flour (All Purpose)
¼ CupWater
1.5 Ounce Grated Cheese (Your favorite- I used Gruyere)
To Taste Salt
To Taste Black Pepper (Fresh Ground)
1 Quart Peanut Oil

Procedure:

Boil the whole jalapenos in lightly salted water for 10 minutes.

Drain the jalapenos and shock them in ice water until chilled.

Remove them from the ice water and pat them dry with a paper towel.

Make a slit in the jalapenos from the stem to the bottom; remove the seeds..

Tightly pack the cheese into every pepper.

Mix the flour and water together until smooth; season with salt and pepper.

Roll the stuffed pepper in the batter and deep fry in 350 degree Fahrenheit peanut oil until done. Note: I put a little extra batter on the slit of the pepper so that it does not split open and let the cheese come out while cooking.

Get a glass of water!
