Guacamole Dip

Team JEGS chef Nicky Morse has prepared meals for royalty, distinguished diplomats, and Ohio's ultra wealthy at the only four-star restaurant in Columbus, Ohio. He's cooked for country music's brightest stars as part of the support crew for CMT's "Showcase" program. He's mentored young apprentices at Ohio State University, and worked elbow-to-elbow with Wolfgang Puck to raise money for cancer research.

Now motorsport's most decorated chef will be opening his personal cookbook to race fans and members of the media by featuring one of his own creations each week of the 2007 NHRA POWERade Drag Racing Series. Complete with step-by-step instructions, Morse will divulge a complete recipe on teamjegs.com and NHRA.com that will allow budding cooks a chance to create a masterpiece of their own at home.

Chef Nicky will head to Old Bridge Raceway Park is Englishtown, NJ this week. The recipe book opens to a page where we find Guacamole Dip. This is a very simple recipe with lots of flavor. If you ever have to go to a party and need something tasty to take, this can be made in a matter of a few minutes.

Guacamole
(This makes 8-12 portions)

This is a very simple recipe with lots of flavor. If you ever have to go to a party and need something tasty to take, this can be made in a matter of a few minutes.

Ingredients:

5 Each Ripe Avocado
1/3 Cup Sour Cream
1 Ounce Lemon Juice (Fresh Squeezed)
To Taste Salt
To Taste White Pepper
½ Cup Salsa (Your Favorite)

Procedure:

Put the avocado meat, sour cream, lemon juice, salt and pepper in a food processor. Using the knife attachment, run the food processor until the mix is pureed. Scrape down the inside of the bowl. Add the salsa and mix again until the desired texture.

Variation: Chunky Guacamole:

Reserve half of the avocado and all of the salsa. After the remaining ingredients are pureed, rough chop the reserved avocado and fold it and the salsa into the mix.

Note: When you make guacamole, you have to be very careful with the amount of salt that you add, so it is very important to taste it as you make it with the accompanying item such as tortilla chips. Some tortilla chips have enough salt on them that you don't need to add any salt to the guacamole.
